Lamb Biryani

Traditional Indian Lamb Biryani with Pakistani Touch. My dearest friend in ipswich who comes from Pakistan and an excellent cook. I fell in love with Pakistani cooking after i met her and ignorance towards some spices and ingredients came alive. She influenced my take on cooking and here is my version of Lamb Biryani..

Lamb Biryani tastes different and every state in India have their own take on this. My version is an amalgamation of indian and pakistani influence as one of my dearest friend comes from pakistan and is an awesome cook. Her cooking style was an eye opener for me. Here is my take on this:



3 cups Basmati Rice – Kohinoor Basmati Rice
2 Big Onions – sliced
2 Large Tomatoes
1 tbsp Ginger Garlic paste
220gms Minced Lamb
4 Cloves
2 Black Cardamom – if you cant find them, you can always use green ones
1″ Cinnamon Stick
3 Bay Leaves
2 Mace
1 tsp Chilli Powder – optional
1/2 tsp Turmeric Powder
1 tbsp Coriander Powder
1 bunch Coriander Leaves
1 bunch Mint Leaves
3 tbsp Sunflower Oil

Biryani masala: Recipe for homemade one given below. You can always use store bought ones if you like.

8 Cloves
2″ Cinnamon Stick
2 Black Cardamom

Marinade the meat with the following for atleast 2 to 3 hours or overnight would be perfect.
2 to 3 tbsp of Lemon juice
3 tbsps Natural Set Yoghurt
1/2 tsp salt
1/2 tsp ginger garlic paste
3-4 whole green chillis without stalks
1/4 tsp chilli powder
1/2 tsp coriander powder
Mint leaves small bunch


1.Heat sunflower oil in a heavy bottomed pan. You can also use Ghee to make it more fragrant.
Add the bay leaves, cloves, cinnamon, cardamom , a quick stir and add sliced onions and fry for 4 to 5 minutes.
2.Add the ginger garlic paste, turmeric pwd, chilli powder, salt,chopped tomatoes, coriander leaves and mint leaves. Mix it really well and then add the lamb pieces and cook till the lamb is cooked. Add water 1 or 2 cups if needed and simmer till you get a thick gravy.
3 Add biryani masala powder,soaked and drained basmati rice and mix well. Now add equal quantity of water( for 3 cups of rice – add 3 cups of water).Simmer again and cook till the rice is done.You can garnish with roasted cashews and serve hot.
